Ingredients

1. 1/2 cup cashewnuts, broken into rough pieces
2. 3tbsp gram flour (besan)
3. 1tsp rice flour
4. 1tbsp ginger-garlic paste
5. 1tbsp finely chopped pudina (mint)
6. 1tbsp finely chopped fresh coriander leaves
7. 3 green chilies, chopped


8. A few curry leaves, finely chopped
9. 1tsp jeera (cumin seeds)
10. 2tsp red chilli powder
11. 1tsp dhania (coriander) seeds, crushed
12. 1tsp baking soda Salt, to taste
13. Oil, for deep-frying

Method:

1. Mix all the ingredients for the pakodas except the oil.
2. Warm 11/2 tbsp oil and add to the mixture and mix thoroughly.
3. Add some warm water to it to get the batter to a dropping consistency.
4. Heat oil in a kadhai and drop little portions of the pakoda batter into the oil.
5. Shallow or deep fry over mediumheat until pakodas are a golden brown.
6. Place on kitchen paper to absorb any excess oil. Serve hot.
