Method
  1. Heat the butter in a vessel, add the chopped onions and lettuce and fry for a little time.
  2. Mix the milk and plain flour and add to the above mixture together with 2½ cups of water.
  3. Cook for 10 minutes.
  4. Cool to room temperature and blend the mixture in a liquidiser to a smooth purée.
  5. Heat for some time, add salt and pepper.
  6. Serve hot.
