Ingredients
1. 1 cup flour | 6. 1tsp grated lemon zest | |
Method:
1. Sift the flour and baking powder. Mix with custard powder in a big bowl. Set aside. Melt butter; stir in the sugar while the butter is still warm.
2. Pour this into the flour mixture along with the egg, lemon essence, juice and zest.
3. Bring mixture together to form soft dough. If too wet, add some flour.
4. Shape dough into rounds and then press down slightly into 2cm discs. Place on a greased cookie sheet, about 1cm apart, and bake in a preheated oven at 150�C for about 15-20 minutes.
5. When done, the cookies will be golden in colour and the surface will be slightly cracked.
6. Leave the cookies on the cookie tray until completely cool, then store in an air-tight container.
